Every once in a while I crave pizza. Since I eat gluten free I have found it rather hard to make a good gluten free pizza crust plus it takes so much time and work. I wanted a quick easy pizza.

So I came up with this recipe that uses corn tortillas as the crust! They are gluten free, pre-made, and they made a great crust when fried on the stove top.

These are so quick and easy to make that I will cook up two or three at a time. And they are so tasty they cure that pizza craving!

Supplies

You will need:

  • corn tortillas
  • your favorite pizza sauce
  • some grated cheese
  • your choice of toppings

Step 1: Prep Tortilla

To start off add some oil to your pan and let it heat on medium.

Once the oil is hot, place your corn tortilla in the pan and let it fry for about 30 seconds then flip your tortilla over.

Step 2: Add Toppings

Now for the toppings.

Spoon on your sauce and spread around. Then add some cheese and any additional toppings.

I personally like to use pasta sauce since it comes ready-made and I enjoy the taste but feel free to use your favorite pizza sauce or to make your own.

Step 3: Finish Frying

Continue to let your pizza cook until the cheese is all melted. I like to cook mine for another few minutes until the the tortilla is nice and crispy.

Once the tortilla is cooked to your liking, remove from the pan and let cool. If you like, add some Parmesan cheese for more flavor.

Now enjoy your personal stove top pizza!
