Intro: ANZAC Biscuits

ANZAC biscuits are a delicious and traditional snack food that we eat all the time in Australia. They are most available in all our major supermarkets and are usually baked fresh in the stores because they are so popular!

I find, however that they are best straight bang out of the oven and are absoluetly incredible!!!!

They were traditionally made during World War 1 due to their long shelf life and sweet yet nutritious ingredients (kind of). My cookies only ever last a couple of days but they usually can last up to a week or so in an airtight container.

STEP 1: Ingredients

- 1 1/2 Tbsp water

- 1/2 tsp bicarb- soda

- 1/2 tsp salt

- 1/4 cup Dark bron sugar

- 1/2 cup Brown sugar

- 125g butter

- 1 Cup Plain Flour

- 1 1/4 Cup Rolled oats

- 3/4 cup Dessicated coconut

- 1 tsp Vanilla bean paste

- 3 Tbsp golden syrup (or honey or corn syrup if you do not have this outside of Australia)

- Cooking spray or oil

STEP 2: Equipment

- Baking trays

- Baking paper

- Tablespoon measurement

- Wooden mixing spoon

- Small saucepan

- Wire cooling rack

STEP 3: Make the Sugar Mix

In the sauce pan place the butter, sugar, water, vanilla and golden syrup over a low heat until all melted.

While this is melting (about 5 minutes) make the flour mix.

*Note* when measuring out the golden syrup spray the tablespoon measurement with cooking spray or coat in canola oil. this will prevent the goledn syrup from sticking in the spoon *Note*

STEP 4: Make the Flour Mixture

While the sugar mixture is melting, in the large mixing bowl whisk together the flour, oats, coconut and salt until all combined.

STEP 5: Mix Together

Once the sugar mixture has melted add the bicarb soda and stir quickly until the bicarb sode has equally distributed in the mixture. I use a spoon but using a whisk can help prevent lumps of bicarb soda.

*NOTE* stir this together until the whole mixture has small bubbles rising from it. If there are only a few bubbles kee stirring.

Then add this mixture to the flour mixture and stir together.

STEP 6: Bake the Biscuits

Line baking trays with baking paper and place about 1 tablespoon of cookie mixture onto the trays and allow a few centimeters between cookies as they should spread out.

lace them into an oven preheated at 170 degrees Celcius (fan forced) for about 10-12 minutes. If you like chewy cookies bake them for less time, if you like crunchy cookies bake them for longer.

TRUST ME anzac cookies are best when they are chewy!!

STEP 7: Serve

Once the cookies have come ou of the oven they will still feel soft, this is normal they shoulf harden a little when cooling. Transfer them to a wire cooling rack if desired and then eat them!!

Treat yourself with a freshly baked anzac biscuit OMG they are so delicious. If you have vanilla ice cream as well it just takes it to a whole new world! (bad Aladdin pun)

I dunno what "golden syrup" is, but my first thought looking at this recipe was, "mmmmmmm...Vermont Maple Syrup, aaaaahhhhhhhH!!!!!!"
