Introduction: Air Fried Spicy Fish and Potato Samosas

I love samosas, the hot and spicy Indian specialty made with deliciously spiced potatoes, vegetables and meat.  In this recipe I mixed things up, using fish and carne asada seasoning. I chose mahi mahi as its firm, meaty texture  holds together well when tossed around in a frying pan. Instead of making my own pastry I opted to use store bought puff pastry. I cooked the samosas in the air fryer instead of in oil and the results were delicious.

Supplies

Ingredients ( makes 6)


6 mini Gold potatoes 

3 cups Water 

2 tablespoons Olive oil 

1/4 cup chopped Red Onion

1 fresh Jalapeño 

2 teaspoons Carne asada seasoning

1 tablespoon  Ginger paste 

1/2 cup  Fresh Parsley

1/2 cup sweet Corn

1 large or 2 small Mahi mahi steaks

1 sheet puff pastry, thawed

1/4 cup olive oil for basting

1 tablespoon all purpose flour

Small saucepan

Frying pan

Air fryer 

Wooden spoon

Step 1: Boil Potatoes

Begin by boiling the potatoes. Place water in small saucepan and bring to a boil. Place potatoes in saucepan, reduce heat and simmer for approx 15 minutes or until potatoes are tender. Remove from heat, empty out water and set potatoes aside. 

Step 2: Cook Onions

Place 2 tablespoons olive oil in frying pan. Finely chop onion and add to pan. Cook until onions are starting to soften.

Step 3: Add Jalapeños and Seasoning

Remove stalk and seeds from jalapeño and finely  chop jalapeño. Add chopped jalapeño to frying pan and continue to cook. Add carne asada seasoning and stir well.

Step 4: Add Remaining Vegetables

Remove from heat and add ginger paste, parsley and corn. Cut cooled potatoes into small pieces and add to corn mix. Pour vegetables into small saucepan

Step 5: Cook Fish

Cut mahi mahi into cubes then add to frying pan. Cook until fish is opaque and cooked through. Add in vegetable mix and stir to mix well. Cook for 1 minute more. 


Allow mixture to cool. 

Step 6: Prepare Puff Pastry

When ready to serve samosas, scatter flour on chopping board. Carefully roll out pastry then cut into 6 rectangles. 

Step 7: Place Filling in Pastry

 Place 2 heaping tablespoons of fish mix in center of each rectangle then fold diagonally to form 6 triangles. Crimp edges with the dull edge of a knife to seal in filling. Make sure you use as much filling as possible.

Step 8: Prepare Air Fryer

 

Pre-heat air fryer for 2 minutes at 400F. 

Grease basket of air fryer with olive oil. Baste top of samosas with olive oil.

Place samosas in basket of air fryer for 8-10 minutes or until pastry is golden brown and cooked through.

Step 9: Serve and Enjoy

Serve samosas, hot or cold, with mayonnaise, yogurt or your favorite dipping sauce.
