Introduction: Any Day Satay Sandwich

A heaping platter of chicken satay skewers lasts about a nanosecond with my family.  The flavorful marinated chicken, grill marks filled with tangy sauce and a creamy peanut dipping sauce….often I hear I wish we could have these every day.  Sorry- too much work, however the Any day Satay Sandwich is so easy you can have it , well any day.


Supplies

Ken’s Asian Sesame salad dressing

Peanut Butter

Cooked chicken (tofu also works well)

Mini naan bread

Mixed greens

Lime

Curry powder (optional but HIGHLY recommended) 

Step 1: Any Day Satay Sandwich

  • Slice cooked chicken
  • Cover with Ken’s Asian Sesame salad dressing
  • Wrap 2 mini naan in damp a paper towel, microwave for 10-30 seconds
  • SLATHER both naans with peanut butter
  • Arrange chicken on naan
  • SPRINKLE with curry powder (highly recommended, but optional)
  • Add mixed greens, squeeze a drizzle of lime
  • Enjoy - it’s quick, easy and delicious
