Introduction: Apple Crumble Pie Bite

Crazy thing, I thought I had already posted this recipe, it is my other favorite Apple Pie Dessert! I even made most of these photos over 2 months ago, but I am ready to share it with you now and I realize you are like woah... another Apple dessert, I have to admit I don't make cakes very often, but pies and especially these pie bites, I love to make, super easy already portioned and perfect for when you want a little something sweet!


Supplies

Bottom:

Puff Pastry

Filling:

6 Apples (peeled, cored and sliced)

1 Tbs. lemon juice

1/4 tsp. Cinnamon

2 Tbs. Honey

Crumble:

1/2 cup All Purpose Flour

1/4 Cold Butter

1/4 cup Brown Sugar - or Coconut Sugar

1/4 cup of Quick cooking oat

1 Tbs. of Cinnamon (optional)

Step 1: Prepare Filling

Peel, and Slice your apples.

Place Apples in a Saucepan

Add the Lemon juice, Cinnamon and Honey

Cook on medium heat until softened

Mash half of the cooked apples with a Potato masher (step is optional)

Allow to cool, before placing in the pastry

Step 2: Cut Puff Pastry

I love using Puff Pastry for the bottom of my Pie Bites.

This is a product you can find in the frozen section of your Grocery Store

I always have several boxes in my freezer, ready to make a quick breakfast or Pie Bite.

You can make the bottoms 2 ways, cutting circles by tracing a bowl (I can only get 9 circles out of my sheet of puff pastry)

Or cut the sheet into 12 even squares, perfect for a 12 count Muffin Tin, win win, then I trim the edges off, so it fits nicely into the muffin tin (see last picture)

Step 3: Make the Crumble

Easy Crumble:

1/2 cup flour

1/4 cup Cold butter

1/4 cup quick cook oats or Rolled oats (your pick)

1/4 cup Brown Sugar or Coconut Sugar

Mix together all ingredients until Crumbly!

Using Coconut Sugar will give it a slightly different taste, although it is not any more nutritious or healthier than any other sweetener, it does have a lower glycemic index than white sugar, so a tad better for the blood sugar.

Step 4: Fill and Bake

  1. Spray the 12 count muffin tin with non-stick cooking spray or rub a small amount of butter in each cup.
  2. Place a Puff Pastry piece into each cup
  3. Fill with Apple Pie Filling
  4. Cover with Crumble

Bake in 350 degree oven for 20 minutes until puff pastry puffs up and the top gets golden brown.

Pull out of the oven and allow to cool for 5 - 10 minutes, then serve with Ice-Cream or by itself.
