Supplies
Blue Rice
- High grain basmati rice
- Blue pea flower
- Salt and butter
- Cumin seeds
Baked Fish
- Bhetki fillet
- Prawn minced
- Salt and Pepper
- Butter
- Rosemarry
- Chilli flakes
- Oregano
- Lime juice
- Freshly minced garlic
Mushroom Sauce
- Button Mushroom
- Butter
- Flour
- Milk
- Fresh Cream
- Coconut Milk
- Salt
- Pepper
- Oregano
- Chilliflakes
Step 1: Prepare the Prawns
- Take fresh prawns. Here we took 6-7 tiger prawns.
- Cleaned, descaled and gutted the prawns.
- Minced the prawns using knife.
Step 2: Make the Mixture
- Add minced garlic, black pepper powder and soya sauce to the minced prawns and mix them.
Step 3: Bhetki Sandwich
- Take two fillets of bhetki fish. Sprinkle some salt and pepper on them.
- Take two good spoon-full of prawn mix and spread on one fillet.
- Cover it with another fillet from above, and keep the sandwich preparation aside.
Step 4: Prepare the Mushroom
- Prepare the mushrooms by cleaning them and slicing them.
Step 5: Prepare the Grilled Stuffed Fish
- In a hot skillet, pour butter, minced garlic and freshly crushed black pepper and stir for few seconds.
- Carefully add the fish.
- Fry 1:30 minutes on each side, while tossing the butter.
Step 6: Make the Mushroom Sauce
For the white sauce.
- Add butter, minced garlic and stir a little.
- Add the sliced mushrooms. Fry for10-20 seconds
- Add salt, dried parsley, 1 tsb of flour, fresh cream/milk, coconut milk and give them a mix.
- Add cheese cubes and mix.
- Cover and cook for 2 minutes.
- The white sauce is ready.
Step 7: Prepare the Blue Water
To make the blue water for the rice preparation:
- Add 400 ml of water in a pan.
- Add 1 tsp of salt, and 10-14 blue pea flowers.
- Boil for 5 minutes
Step 8: Making the Blue Rice
To make the rice:
- Take 1tbsp of butter.
- Add shah jeera (white cumin), and minced garlic. Stir for 10-20 seconds.
- Add 250grams of soaked rice.
- Add the 400ml blue water by straining the blue flowers.
- Cover and cook the rice for 20 minutes until the water evaporates and rice is done.
Step 9: Delicious Blue Rice
To make the platter:
- Stuffed the rice on a small steel bowl and casted the rice on a plate.
- Enjoy the rice with some white sauce and fish.
- A complete plate with good amount of protein, carbs and tastes the best when jeera rice is taken with the white sauce mushroom and the fish as sides.
Step 10: Adding Microgreens
Being decorated with some freshly harvested microgreens and edible blue pea flower on top.
Step 11: Plate and Serve
