Introduction: Baked Salmon

I really am about cooking simple recipes, and have been experimenting with no-salt added recipes lately due to my husband’s high blood pressure.

One of the recipe books in my arsenal is the Paleo Diet book, with of course Paleo recipes.

With all that said, this recipe is BASED off of a Paleo recipe, but IS NOT completely Paleo, due to the butter.

Here’s my version of it and I break it down to one serving or one steak of salmon:

Ingredients for One Salmon Steak:
1 salmon steak (about ½-pound)
Approximately 1 tablespoon fresh lemon juice (the juice from one-half of a lemon)
1 teaspoon dill weed (from one sprig)
1 garlic clove, chopped
1 tablespoon chopped fresh chives (for topping, I consider this optional)
1 tablespoon of un-salted butter (NOT-PALEO-APPROVED)
Optional: Lime Wedges

You will also need:
Baking Pan

As you can see from the photos, I made two of these steaks, thus each of the steaks had the ingredients listed above.

Pre-heat the oven to 350-degrees F.

Place the salmon in a piece of foil big enough to wrap completely around the steak, and place in baking dish.

Pour lemon juice over each steak.  (Keep out those pesky seeds!)

Sprinkle with chopped dill.  I try to keep as much stem out of the dill as possible.

Place the chopped garlic on the steak.

Place the pat of butter on top.

Seal each steak in its aluminum pouch.
Bake for 30-minutes (for two servings) or check after 25-minutes (for one).  You are looking for the fish to flake easily with a fork.

You can serve the salmon with chives and optional lime wedges.

To me, this recipe is easy, delicious and SALT-FREE! 
I can just imagine getting fresh salmon and cooking this up almost every day....
