Introduction: Banana Cream Pie and Cinnamon-honey Crust
Banana cream pie from scratch... mmm.
A good, rich one is made from whole dairy and enough egg yolks. Most are made with a traditional pie crust, or even graham cracker crust. With no graham crackers in the pantry, I decided to make my own cinnamon/honey graham dough. One option is to make a giant cookie, bake, crumble, then combine with melted butter, and push into a pie plate. Instead, I decided to roll out and pre-bake right into the pie plate. Whichever method you use, it pairs well with the banana cream!
Step 1: Cinnamon Honey Graham Pie Dough
Cinnamon Honey graham pie dough
(This is more like a cookie than a flaky pie crust)
250 thing whole wheat or white flour
1 tsp salt
4 Tbsp lt brown sugar
1 Tbsp honey
2 tsp cinnamon
1 tsp ginger
125 g cold butter pats
Icy water with gin and lemon
Form into disc, put into fridge for 30 minutes
Bake pie dough
Preheat to 400
Roll out, place into pie pan
Brush edges with egg wash
Dock bottom with fork, add pie weights
Also a silicone edge crust protector is nice to use, to minimize overbrowing of crust, some use foil.
Bake for 20 minutes, remove immediately
(I baked for 25 minutes, which was 5 minutes too many)
While that cools...
Step 2: Make Filling/custard
Filling
100 g coconut sugar
40 g coconut flour
1/4 tsp salt
Envelope of knox gelatin
1/2 cup cream
Egg yolks 5/6, or 100 g
2 cups whole milk
2 tsp vanilla extract
Into a medium saucepan:
Add all dry filling ingredients, combining thoroughly.
Add wet ingredients(except for vanilla).
Whisk thoroughly.
Put over medium heat for 10 minutes, stirring constantly
again.
Step 3: Add Bananas and Filling to Crust
Slice bananas and place into bottom and up sides of prebaked crust
Pour in filling
Chill in fridge for minimum of 3 hours
Step 4: Whipped Cream
1 cup of cream
Whip in mixer. As it starts to thicken, add 1/4 tsp of cream of tartar
When soft peaks form, add in:
2 Tbsp white sugar, powdered
1/2 tsp vanilla extract
Whip until stiff peaks
Plop onto pie, spreading over entire surface, creating hills and valleys.
Step 5: Toppings
Optional: Toasted coconut, jimmies, or both!
If you'd like toasted coconut, that should bake at 275 for 5-8 minutes.
Fill a bowl with a tsp each of lemon juice and water, slice bananas into bowl to coat.
(This prevents the bananas from browning.)
Sprinkle toppings on entire pie, add a few bananas to each piece after slicing.
Your diners will be so happy... and full!
