Introduction: Beef Vindaloo Curry

I love cooking curries and this one was the first of a kind being cooked in Tajine (slow cooker).

Very easy to make and very tasty too :)

Step 1: Meat Preparation

You will need 1,5 kg beef cut into small chunks. Rub the chunks with 1 tsp salt and 1 tsp ground black pepper

Step 2: Fry the Meat..

Place your Tajine on stove, the lowest heat to warm it up...

Pour 4-5 tbs of vegetable oil inside and when it heats up add the meat pieces too.

Step 3: Add Onion and Spices..

After the meat has sealed.. fried for like 10minutes - scoop it out and set aside in a warm place.

Add 3yellow onions - chopped and fry for about 8minutes...

Then add 2tsp black or brown mustard seeds and fry slowly till they pop...

Step 4: Add Garlic and Ginger..more Spices..

Once the seeds have popped up - add 8-10 cloves garlic minced and 2" minced(grated) fresh ginger...

Add spices too and fry shortly : 1/2tsp cayenne pepper, 2tsp paprika, 1/2tsp turmeric, 2tsp ground cumin,

1 1/2 tsp cinnamon, pinch of ground cloves, 2 tsp garam masala and 1/2 c. cider vinegar + 1/2c. water

and 1-3tsp brown sugar.

Cook for a few minutes....

Step 5: Continue Cooking ...

Return the meat in Tajine and continue cooking for several hours...

Serve with plain Basmati Rice and other vegetable side dishes.
