Introduction: Best Chicken Wings EVER! (and a Bonus of Buffalo Sauce)
What follows is the chicken breading recipe that I have searched for most of my life! It is SUPER simple, and makes some AMAZINGLY crispy perfect wings, which can be eaten plain, or rolled in whatever sauce you would prefer. To get started,you will need:
Chicken. Wings, breast strips, or whole chicken pieces will work. I will be using wings.
A pinch of salt
A pinch of pepper
A pinch of baking soda
1/3 cup flour
1/2 cup corn starch
1 egg
This will be enough for a package of wings, (about 20 or so) If doing a large batch double the amounts.
Buffalo sauce
8 tablespoons BUTTER (not margarine)
8 tablespoons hot sauce Sriracha is a good base, or Tapatio, We like heat, so we always add some Wicked tickle Hot sauce as well. (made with ghost peppers, and Carolina reapers)
2 tablespoons vinegar
a dash of Worcestershire
a pinch of garlic powder
To make the sauce, add all ingredients to a pan over medium heat, heat, stirring often until butter is melted.
Step 1: Prepare Your Wings
To start, get t he fryer heating up to 350 degrees.
If your wings are whole, cut off the tips, and disjoint the winglet, from the wing. discard the tips.
Add your chicken to a large bowl, toss a pinch of salt, a pinch of pepper, pinch of baking soda, the flour, and t he corn starch on top of the chicken in the bowl. crack the egg over the top of all that. Now, (hopefully you washed your hands too, lol) get your hands in there, and turn the chicken several times, to get it coated with this mixture. the egg will help the batter stick as well.
Fry your wings for 12 minutes, shaking the basket a few times during this fry to keep them from sticking together. after 12 minutes, remove from oil, and allow to rest of paper towels while you fry the rest for 12 minutes.
After all chicken has had its initial 12 minute fry, but the first chicken that was done back in the fryer for 10 more minutes. After all the chicken has been fried for an additional 10 minutes after a rest, then its time to dip it in some sauce, and eat! Your wings will be perfectly crispy, but yet still juicy and perfect on the inside as well!
I included our buffalo sauce recipe, but you could also use sweet and sour, teriyaki, or bbq, or any other sauce that you think would be good!
