Introduction: Bird Nest
A "bird nest" is a meatball with a hard-boiled egg in the center, served with tomato sauce. It's easy to make and tasty as hell!
Step 1: The Sauce
We'll start with the sauce since this has to simmer for quite a while. I always make a large batch at once. You'll need:
- onions;
- canned tomatoes;
- garlic;
- salt;
- cayenne pepper;
- oregano.
Quantities aren't that important, it depends on your personal taste. I like this sauce with lots of onions. Start by dicing the onions and cooking them in oil on low heat. While the onions are cooking, mince the garlic and add it. Cook the onions until translucent, then add the tomatoes and bring to a simmer.
Let the sauce simmer for about half an hour, then season with salt, cayenne pepper and oregano (or whatever spices you like). I use lots of oregano in this sauce. It's also perfect for meatloaf!

Step 2: The "bird Nest"
Next, let's make the meatball! For one bird nest, you need:
- 1 hard boiled egg;
- 200 grams of minced meat (I use half beef, half pork);
- raw egg, beaten;
- flour;
- breadcrumb;
Start by flattening the meat into a patty and place the egg in the center. Roll the meat around the egg, forming a ball. Make sure it's well sealed and roll it into a smooth meatball.
Next, a layer of breadcrumb is applied to form a nice crust. I used breadcrumb with paprika and parsley (that's why mine is orange). First, roll the meatball in flour. This is to make the egg stick properly. Next, dip it in the beaten egg, making sure it's covered entirely in egg. Finally, roll through the breadcrumbs.
Now you can either deep fry it or bake it in an oven. I used an oven, since I don't have a deep fryer. If you use an oven, bake for 30 minutes at 180°C. And that's all there is to it!
