Introduction: Bloody Black Pot With Bones
Tomato soup? Nope.
But someone got pureed. And . there . is . splintered . bones . in the soup.
Serve this totally healthy, innocent, and vegan but seemingly gross soup in a black pot with "bones" to disgust, or present it in a typical way for just a simple, easy, healthy, comforting fall soup.
Step 1: Ingredients
2 1/2 c. peeled and diced potatoes (4 medium)
2 1/2 c. peeled and diced carrots (4 medium)
2 1/2 c. peeled and diced red beets (1 very large)
2 medium onions, chopped
4 cloves garlic, minced
4 c. water
1 to 1 1/2 Tbsp. salt
1 large pinch dried basil
4 Tbsp. coconut cream (non-vegans may use dairy cream)
Step 2: Cook
Place the potatoes, carrots, red beets, onion, garlic, and water in a medium pot and simmer with lid till the vegetables are soft, 30 to 45 min.
Step 3: Puree
Puree the soup with an immersion blender or in a stand blender.
Return the pureed soup to the pot and add salt, basil, and coconut cream (or dairy cream), stirring well.
Step 4: Serve
Serve the soup warm.
For a disgusting "Bloody Black Pot with Bones," serve in a black pot and sprinkle the soup with sunflower seeds.

Yields: 4 servings as main dish or 8 servings as appetizer
Ingredients
