Introduction: Brown Butter Chocolate Chip Cookies

My go-to cookie recipe when I need something a little sweet and a little salty.

Supplies

Ingredients:

130g butter

100g dark corn syrup

150g light brown sugar

1 tsp fine salt

1 egg (bring to room temp)

1 tsp vanilla extract

100g plain flour

50g whole wheat flour

1/2 tsp baking soda

115g milk chocolate chips

115g dark chocolate chunks

flaky sea salt to sprinkle on top


Supplies:

large pan

whisk

rubber spatula

large bowl

sifter

kitchen scale (to measure all ingredients)

Step 1: Brown the Butter

In a large pan, melt the butter & continuously stir for about 5-10 minutes over medium heat until the butter starts to brown.

The butter will go from yellow, to foamy, to golden, & then brown. It will begin to smell nutty when it has reached the perfect browning.

Be careful! It can easily burn, so do not walk away from your butter!

Step 2: Cool the Butter

Place your brown butter in a bowl & chill for 30 minutes.

Step 3: Whisk the Wet Ingredients

In a large bowl, whisk together the following ingredients:

  1. light brown sugar
  2. dark corn syrup
  3. salt
  4. butter
  5. egg
  6. vanilla extract

Step 4: Fold in Dry Ingredients

Sift the plain flour, whole wheat flour, & baking soda.

Fold into the batter with a rubber spatula.

Step 5: Add the Good Stuff

Fold in the dark chocolate chunks & milk chocolate chips with the rubber spatula.

Step 6: Chill the Dough

Chill the dough for at least 30 minutes to improve the flavor.

Step 7: Baking the Cookies

Pre-heat the oven to 350 degrees Fahrenheit.

Scoop the dough with a large spoon & drop onto a parchment lined baking sheet. Space the cookies about 4 inches apart so the cookies can spread out evenly.

Bake for 10-14 minutes, or until the edges have lightly browned.

Step 8: Final Touch

Remove the cookies from the oven and sprinkle with flaky sea salt & leave on the baking sheet until cool.
