Introduction: Cajun Kale Chips

Healthy chips! Seems like an oxymoron right?

I had a kale harvest this year like no other and needed something interesting to make with it all. These spicy cajun kale chips were a perfect potluck item that got eaten up before all the guests had arrived!

Step 1: Ingredients

Super simple ingredients list: kale, oil, seasoning. I used cajun seasoning spice and olive oil. Try just salt, try nutritional yeast or cracked pepper.

For every big bowl of kale, use one tablespoon of oil and one teaspoon of seasoning.

Step 2: Rip Kale and Season

Remove the stems of the kale and rip leaves into small bite sized chunks.

If need be, wash the kale and dry thoroughly in a salad spinner. Allow it to dry before continuing.

Drizzle one tablespoon of oil over the kale and mix it in well. Shake seasoning over the mixture and toss.

Step 3: Cook Slow on Low

The kale chips are tricky in that if you bake them too long or too hot, they crisp away into a burnt powder. If you don't cook enough, they are soggy and sad. The best way to cook kale chips (I've found) is to cook for 10 minutes on 300F.

Remove the chips from the oven and leave them on the tray for an additional 3 minutes. This will help them crisp up.

Add to a bowl and enjoy!
