Introduction: Cheese Pie

About: I am a former English teacher turned Interactive Media Instructor turned STEM teacher turned computer science teacher. I like to make, fix, and take apart. Few things are more fun than taking something apart t…

This is a recipe handed down from my mother. She used to make this quite often when I was child. I would request it on my birthday instead of cake. This pie is creamy and sweet with a tang that really complements the other flavors. Another great thing is it requires no baking, so it is perfect for making during the hot months of summer.

Step 1: Ingredients

Ingredients
8 oz. cream cheese
14 oz. sweetened condensed milk
1/3 cup lemon juice
1 tsp. vanilla flavoring
1 graham cracker pie crust
1 can cherry pie filling chilled

Tools
Mixer
Measuring spoons/cups
Can opener
Spatula

Step 2: Mix the Filling

Scoop out the cream cheese and mix until light and fluffy.

Then open the sweetened condensed milk and mix with the cream cheese.

Measure out the lemon juice and vanilla flavoring and mix.

Step 3: Pour Filling to Crust

You can make your own crust, but I bought one already made. Pour the just mixed filling into the pie crust. Use the spatula to scrape out any filling still in the bowl. Use the plastic cover from the pie crust to cover the pie. Then place the pie in the refrigerator for three hours. It will still be slightly runny, but should be okay. If you can wait overnight it will be firm.

Step 4: Enjoy Your Pie

Slice the pie and serve. Depending on how long you waited decides how messy the serving will be. Put cherries on top and you will have a cool summer treat.
