Introduction: Cherry - Raisin Cookies
This was always one of my favorite cookies but the recipe make a small amount and cutting the cherries can be messy (your fingers will turn red but its worth it.) So mom never made them much. Once I got a cookie scooper "wow" worth there weight in gold no more two teaspoons and what a time saver.
This is a good Holiday cookie with bright red and black bits on a pink cookie. I have also made these with the green Maraschino cherries.
Step 1: Ingredients
Cherry-Raisin Cookies
Double Single batch
1c 1/2 c shortening
1 1/2 3/4 c sugar
6Tbsp 3 Tbsp Cherry Juice (from the Maraschino jar)
2Tsp 1 Tsp vanilla
2 1 egg
3c 1 1/2 c Flour
1tsp 1/2 tsp Baking soda
16 to 20 8 to 10 Maraschino Cherries cut into eighths
2c 1c raisins

Cherry-Raisin Cookies
Double Single batch
1c 1/2 c shortening
1 1/2 3/4 c sugar
6Tbsp 3 Tbsp Cherry Juice (from the Maraschino jar)
2Tsp 1 Tsp vanilla
2 1 egg
3c 1 1/2 c Flour
1tsp 1/2 tsp Baking soda
16 to 20 8 to 10 Maraschino Cherries cut into eighths
2c 1c raisins
Place teaspoon full (small scooper) on to baking sheet about 2 inches apart. Bake at 370o till edges are lightly browned. 10 to 12 min.
Step 3: Cut the Cherries
Drain the Cherries (This makes cutting them less messy.) Cut the cherries into eights set aside.
Step 4: Cream, Mix
Beat the first four ingredence on the list. Add the egg(s) and beat again.
Step 5: Mix In
Add the flour sifted with soda and beat again. Mix in the Cherries and raisins.
Step 6: Bake
Place by teaspoons (small scooper) on to baking sheet about 2 inches apart. Bake at 370o edges are lightly browned 10 to 12 min. Makes about 3 doz. cookies.
