Introduction: Chewy Apple and Cinnamon Oatmeal Cookies

This recipe I found called for dried apple, instead I found these apple rings which are partially dehydrated, so in terms of texture, they resemble dried apricots, firm but still a bit squidgy. I chopped them into 2cm chunky pieces for this recipe. To make 20-24 (depending on how big you want them to be.)

Here's the ingredients in full:

1/2 cup butter, softened

1/2 cup brown sugar

1/4 cup caster sugar

1 egg

1/2 tsp vanilla extract

3/4 cup all-purpose flour

1 tsp ground cinnamon

1/2 tsp baking soda
1.5 cups old-fashioned oats
1/2 cup dried apples, chopped

Step 1: Cream Sugars and Butter

In a large mixing bowl cream together butter and sugars until light and fluffy. Crack in 1 egg and mix until combined.

Step 2: Flour and Spice (and All Things Nice)

In a separate bowl combine together the flour, cinnamon, baking soda and fold into the butter and sugar until fully mixed.

Step 3: Add in the Oats and Apple

Pour in the oats and chopped apple, mix until fully combined. It seemed like the mixture was a bit too thick, so I added a couple of tablespoons of water just to make it a little more workable.

Step 4: Time to Bake!

I didn't worry too much about how big I wanted my cookies to be so I just took about a tablespoon of mixture for each one. Bake at 350f for 10-12 minutes or until golden brown in color. Cool on wire rack.

Step 5: Done!

I felt they would've been better to have some raisins or sultanas too, but it didn't take long for them to disappear!
