Chocolate cookies with cinnamon ganache

Step 1: Ingredients

120g plain flour
30 g cocoa powder
5 g cream of tartar
2 g baking soda
2 g salt
125 g unsalted butter
200 g dark chocolate 70%
2 eggs
60 g caster sugar
130 g soft dark brown sugar

Step 2: Method

Preheat the oven to 160C.
Combine the flour,cocoa powder, salt , cream of tartar , and soda in the bowl.
Melt the butter, stir in the chocolate, and combine until smooth.
Leave to cool at room temperature.
In the bowl of a stand mixer fitted with a whisk attachment, place the eggs and sugars and whisk for 5-6 minutes
until pale and light.
Change to a paddle attachment and add the dry ingredients until just combine.
Add the chocolate and mix.
Transfer the mixture into a piping bag and pipe disks onto lined trays .
Bake for 8-9 minutes .
Cool on the trays.

Step 3: Cinnamon Ganache

150g fresh cream 35%
150g dark chocolate
3 g cinnamon

Step 4: Method

In a saucepan boil the cream with cinnamon.
Pour it over the dark chocolate and whisk until is smooth.
Allow to cool to 29-30C .
Sandwich the biscuits.
