Introduction: Cilantro Lime Coleslaw
This variation on classic cole slaw has beautiful color and a sweet and tangy flavor. It goes great with fish tacos or barbecue sandwiches!
Step 1: Ingredients
- one small head of red cabbage, shredded
- 1/2 c of fresh cilantro, minced
- 2-3 green onions, diced
- 2 limes, zested and juiced
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 2 Tbsp apple cider vinegar
- 2 Tbsp honey
Step 2: Prep the Vegetables
Shred your cabbage using either a box grater or a food processor.
Chop up the green onions and cilantro.
Zest your limes, then cut them in half and juice.
Step 3: Prep the Dressing
Mix the cumin, lime zest and juice, garlic powder, vinegar and honey in a bowl.
Step 4: Mix It Up
Place the cabbage, green onions and cilantro into a large bowl and then pour on the dressing. Mix well and season with salt to taste.
Step 5: Store and Serve
Keep the slaw in the fridge until ready to serve. It went great with shrimp tacos!
