Step 1: Gather Meringue Ingredients

3 room temperature egg whites

pinch of salt

1/4 tsp cream of tarter

1 tsp vanilla

2/3 cup sugar

Makes 2-3 dozen cookies

Step 2: Whip Up the Meringue

Add the egg whites, salt, cream of tarter and vanilla to mixing bowl. Beat at medium speed until the mixture is foamy. Turn the mixer on high speed and beat in sugar a tablespoon at a time. Beat until stiff peaks form.

Step 3: Pipe the Cookies

Using a baggie or a piping bag, paint GEL food colors in lines from corner of baggie or tip of piping bag. Paint as many colors as you want around the bag. Cut off the tip of your bag. You could use a decorator tip if desired. Fill the bag with the meringue. Pipe some out until your cookies show a swirl of color Then pipe all your cookies onto a parchment lined baking tray.

Step 4: Decorate and Bake

Decorate your cookies with colored sanding sugars, rainbow sprinkles and/or chocolate bits.

Bake at 250 degrees for 45 minutes. Turn off the oven and let sit in the warm oven for an hour.
