Introduction: Cracker Crunchies
As a child growing up Saltine Crackers where a household staple. My mother added crackers to just about everything to help the food/ checkbook stretch further. It should come as no surprise that we also ate crackers to satisfy our sweet tooth. I always thought my family was the only ones crazy enough to do this, but I've since learned that it's a pretty common snack among many households. We always called them "Cracker Crunchies" but I've seen them called a variety of things. If you don't already have a family recipe for a quick movie snack give this one a try! It's sweet & salty! This recipe is very simple & requires very few ingredients and dishes to make!
INGREDIENTS:
2 sleeves of Saltine Crackers
1 cup brown sugar
1 cup butter
1 tsp vanilla
Chocolate chips, or any kind of toppings you wish.
INSTRUCTIONS:
Cover a large baking sheet with aluminum foil.
Lay your crackers on the sheet with the perforated sides up. (The perforations absorb the butter & toffee flavors)
Cook your butter & brown sugar together in the microwave for 2 minutes. (remove & stir)
Cook your butter & brown sugar again for 3 minutes more this creates a bubbly toffee for the crackers. (remove & stir)
Add the vanilla & stir it up until it's smooth & consistent (the butter separates out a bit)
Pour the toffee over the crackers & spread it out to cover all the crackers.
Bake the toffee covered crackers for 15 minutes @ 350*
Remove the crackers from the oven. (The toffee should be very bubbly but not burnt)
Sprinkle your chocolate chips on top of the warm toffee & let them melt. Then spread it out across the top.
*Sprinkle whatever else you've selected for your toppings.
Let them cool completely (if you want to speed it along put them in the fridge)
Remove the entire foil from the pan & break it up into seperate pieces.
Serve your delicious snack!
*When growing up my mom would only drizzle a scant amount of melted chocolate across the top, other toppings were out of the question. (way too expensive) As you can see I try to make up for it now with copious amounts of chocolate, nuts, & toffee bits! :)
IF there are leftovers you can store them in a airtight container in the fridge for about a week (like sugar cookies)

I do these with Graham Crackers and I cook the butter and brown sugar on the stove top, when it boils add vanilla, then remove and pour over crackers. Put in a 350 degree oven and when it begins to bubble wait until it is bubbly all over and then remove. Pour choc. chips over and when they begin to get soft, spread. I then lay a towel in the freezer on top of something that will keep it from tilting and put the pan on it and leave until it is completely cold. Be sure and butter the foil.

Thanks for sharing! Doesn't the graham cracker make it too sweet? Do you add some salt then? I like the salt from the crackers. Do you use less butter? I didn't have to butter my foil. It's pretty buttery on its own! What do you call yours? It's fun to see the different methods & names for this treat! :)

I know, Right?!? That's why I always thought we were a bunch of weirdos. Later I found out it was common. That was kinda a relief! :)
