Supplies
1 cup chopped onion
1 garlic clove
6 cups (1.5 L) vegetable broth
2 lb (1 kg) pumpkin
Β½ cup cream
2 tbsp olive oil
Salt and pepper to taste
Step 1:
Peel and chop one onion and a few cloves of garlic.
Step 2:
Cut your pumpkin in half, remove the seeds, peel off the skin, and slice the flesh into cubes.
Step 3:

Add the pumpkin cubes, sprinkle with half a teaspoon of salt, and sautΓ© for about 10 minutes.
Step 5:
Pour in vegetable broth and cook for 10β15 minutes, until it becomes soft.
Step 6:
Remove from heat, let cool slightly, and blend until smooth.
Step 7:
Stir in some cream for extra creaminess.
Step 8:
Serve warm with croutons or pumpkin seeds on top.
