Introduction: Creamy Tuscan Tortellini Soup

This one-pot meal is so easy and budget friendly. It is full of flavor and perfect for those chilly nights. This comfort meal is perfect for any occasion!

Supplies

  1. 1 20 oz bag of tortellini
  2. 1 lb ground Italian sausage (Can be substituted for chicken)
  3. 42 oz chicken broth
  4. 1 32 oz can crushed tomatoes
  5. 2 14.5 oz cans stewed tomatoes
  6. 1 medium yellow onion, chopped
  7. 3 cups baby spinach
  8. 1 1/2 cups heavy whipping cream
  9. 3 tbsp minced garlic
  10. 1 tbsp garlic powder
  11. 1 tsp crushed red pepper flakes (optional)
  12. 2 tbsp Italian seasoning
  13. salt and pepper to taste
  14. 1 dutch oven

Step 1: Brown the Meat

  1. Brown the meat and chopped yellow onion.
  2. Drain the grease after the meat is cooked.
  3. Adding the onion during this step is optional. You may add it later if you wish. I prefer this way because it brings out the flavors more.

Step 2: Combine

  1. Combine the chicken broth, spinach, crushed tomatoes, stewed tomatoes, and the seasonings to the meat and onion mixture.
  2. Bring these ingredients to a boil and then let simmer for at least 30 minutes. This will allow plenty of time for all of the flavors to come together.

Step 3: Add Pasta

  1. Add in the heavy whipping cream and the tortellini.
  2. It is important to add the tortellini 5-7 minutes before you are ready to serve. Nobody wants soggy pasta!

Step 4: Garnish and Enjoy!

  1. Garnish with some freshly shredded parmesan cheese paired with garlic bread sticks.
  2. You now have a yummy soup to eat. Enjoy!
