Introduction: Crispy Pakora

Pakora is a fried snack (fritter), originating from the Indian subcontinent. It is a popular snack across the Indian subcontinent, where it is served in restaurants and sold by street vendors.

Pakora is vegan friendly (just need to swap to plant-based yoghurt) and one thing for sure, your friend can't say 'no' to it.

Step 1: Ingredients:

  • (tsp = teaspoon, tbsp = tablespoon)
  • ½ cup of red split lentil ( masoor dal)
  • ½ cup of yellow split lentil (chana dal)
  • 2 tbsp of rice flour
  • 2 tbsp of gram flour
  • 3-4 tbsp of yoghurt
  • ½ inch of ginger
  • 2 green chilli
  • 1-2 cloves of garlic
  • 1 and 1/2 chopped onion
  • one potato (peel and dice into cubes or grate)
  • a handful of spinach

Seasoning: salt, pepper, coriander seed, cumin seed, chilli powder, 1 tsp garam masala, a teaspoon of turmeric, 2 tsp dried fenugreek leaves ( Kasuri methi), 2 tsp carom seed (ajwain).

For the dipping sauce: 5-6 tbsp of yoghurt, 3 tsp of mint sauce.

Ok, ready? Let's start cooking

Step 2: Soak the Lentils Overnight.

Step 3: Grind or Blend Up the Lentils in a Blender.

Step 4: Add Ginger, Garlic, Chilli, Yogurt Into the Blender and Continue Blending Till Smooth.

Step 5: Binding Everything Together.

Tip out the mixture into a large bowl and add in chopped onion, a handful of spinach and diced potato. Give it a stir then add rice flour and gram flour. Crush some coriander seed and add to the bowl.

Step 6: Seasoning

Add 1 tsp of cumin seed, salt to taste, a pinch of pepper, 1 tsp of garam masala, 2 tsp of carom seed ( crush with your palm) and 1 tsp of turmeric, 1tsp of chilli powder, 2tsp of Kasuri methi.

Mix it all up(add in extra 1-2 spoons of yoghurt if the batter is too thick). The batter should be thick enough to roll out into balls.

Step 7: Now We're Cooking With ... Oil

Heat oil in a deep pan at medium heat.

Step 8: Frying

Wait till the oil is hot, then scoop the mixture into balls and drop gently into the frying pan. Deep fry the balls until golden brown ( 6-7 mins). Stir around to make sure the balls are not sticking together.

Step 9: Admire Your Work

No, I'm kidding. Take the fried balls out into some kitchen towel to drain the excess oil.

Step 10: Make the Dipping Sauce

Make the dipping sauce by simply mixing 5 tbsp of yoghurt and 3 tsp of mint sauce together.
