Introduction: Crispy Zucchini Fries

Ingredients

  • 4 Medium Zucchini, cut into fries (see the photo in step 1)
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese, grated
  • 1 cup Panko
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Parsley
  • Cooking Spray

Step 1: Prep the Zucchini

Depending on the size and shape of your zucchini, you may need to adjust how you cut up your zucchini. My zucchinis were about the diameter of a smaller English cucumber and about half the length.

So I cut them each in half, lengthwise. Then into 5-6 long strips that I cut in half.

Step 2: Make Your Dredging Station

Preheat oven to 400degF.

Make a two-plate dredging station. Add the heavy cream to the first plate. Combine the cheese, panko, and seasonings to the second plate.

Step 3: Dredge the Zucchini Fries

Cover a baking sheet with parchment paper. Dunk each zucchini fry into the cream and then roll in the panko/cheese mixture. Lay them flat on the baking sheet. Spray evenly with cooking spray.

Step 4: Bake the Fries

Bake in oven for 30 minutes. Serve immediately with your favorite dipping sauce.

Special note: You can totally make these in the air fryer if you don’t mind doing it in batches or have the full-sized oven with an air fryer setting (I love mine!). You will need to adjust the cooking time to accommodate the smaller batches if using a countertop fryer. If you have the setting on your oven to do air frying, you can use the same temperature and time listed in the recipe card.
