Introduction: DON'S CARAMEL APPLE PIE
This is my favorite pie recipe. I am always picking up cheap glass pie plates at garage sales to use when giving these pies away.
For my pies I use the ready to unroll & bake pie crust found in the refrigerated section of the grocery.
You will also need:
5 or 6 Granny Smith apples
1 Teaspoon Cinnamon
1 Teaspoon Vanilla
½ Teaspoon Nutmeg
1 Stick of Butter
3 Tablespoons Flour
½ Cup White Sugar
½ Cup Brown Sugar
¼ Cup Water
Step 1: Apples
You need to start with 4 or 5 Granny Smith apples. Use 6 if the apples are small. (All the measurements here are for ONE pie. Double it if you are making two like I did.)
Step 2: Peeling
I use a hand cranked - apple peeler/slicer/corer to get the job done fast. I cut away the parts of the apple that aren’t perfect... And our dog “Sunshine” catches the scraps.
Step 3: Spices
To the sliced apples, add 1 Teaspoon Cinnamon, 1 Teaspoon Vanilla and ½ Teaspoon nutmeg. (I mix these ingredients into the apples by placing a second bowl on top of the first one and shaking the whole mess.)
Step 4: Into the Crust
Put the seasoned apples into a pie crust. I use the ready made Pillsbury crust that you just unroll and bake.
Step 5: The Caramel Sauce
In a saucepan melt 1 stick of BUTTER. (Please notice that I did NOT use the term ‘margarine’.) Add 3 Tablespoons of flour to the hot melted butter. Stir it in and then add ½ cup of white sugar, ½ cup of brown sugar and ¼ cup of water.
Bring this to a boil, reduce the heat slightly, and boil it for an additional 5 minutes. Be certain to continuously stir the caramel mixture the entire time it is cooking!
(Looks like homemade caramels, doesn’t it!)
Step 6: Half on the Pie
Pour ½ of the caramel sauce over the apples in your pie pan. Save the other half!
Step 7: Top Crust
Make a lattice crust over the top of your pie by slicing an unrolled pie crust into approximately one inch strips. I sprinkled a little flour on the table before unrolling the crust to keep it from sticking.
Alternate placing vertical and horizontal strips of the crust.
Step 8: Remainder of the Sauce
Pour the remainder of your caramel sauce over the top of your pie.
Step 9: Tidy It Up
Trim the edges of the crust by running a knife along the outside of the pie plate... Let’s make it look nice!
For special occasions, I sometimes roll out the left over crust, cut it with a cookie cutter (such as a heart for Valentines day) sprinkle a little sugar on the cutout and center it on top of the pie for a little added decoration. (Before baking, of course!)
Step 10: Ready to Bake!
Now it’s ready to bake! Start at 425 degrees for 15 minutes. Then reduce the heat to 350 degrees for an additional 30 to 45 minutes.
You may want to put a cookie sheet on a lower rack under the pie as the sauce can sometimes boil over, and drip off of the pie. (I like an easy clean up!)
Step 11: TA-DAA!
There you have it… “Don’s Caramel Apple Pie“.
Resist the urge… Let it cool for a few minutes!

I've been using this recipe for 9 years and it is always a winner. Made my first pie of the season with apples gifted from my neighbours garden last night and while I was making it I was thinking about all the years I've been using this recipe and how Don's carmel apple pie has been part of every autumn festivity since I was a teen!

We have been make your pie as instructed for the last 2 years. It's always a favorite of mine. It always turns out delicious. And easy to make.
Our only twist, is we will use Macintosh, Gala, or Fugi apples which are a little sweeter. None have been a disappointment following this recipe.
This recipe even rivals my Grandmother's apple pie, which was totally from scratch. Between you and me I love this recipe better. And that's saying a lot. Thanks for sharing!

Love love love this pie. I made for Thanksgiving and it turned out wonderful. My brother asked specifically for apple pie this year and it was a hit with the whole family. He wants me to bring this to every gathering now.

I followed the recipe exactly and this is absolutely without question the most beautiful apple pie that I have ever made. Besides for smelling good and tasting good. I've made a lot of pies but none that I would bring to the bake sales and put out on the table next to the pies of the village "pie ladies" until this one.

The best (easiest and great tasting) pie crust I have found is from Martha Stewart's web site. Look up pate brisee. It is made in a food processor and comes out perfect every time. I'm trying your pie recipe for Thanksgiving this year. Thanks for sharing.

I'm trying your recipe for the first time, and I noticed you didn't mention what temperature you heat the caramel sauce at. The first time I made it, it solidified and became just a sugary clump. I'm not sure if it's because I didn't cook it long enough, or cooked it too long. Please be more specific. I can't wait to try the pie once I do get it done though! Thanks! :)

I use an electric oven and start with the burner on medium-high heat. Once the mixture really starts to boil and begins expanding in the pot, I start turning the heat down. I want it to boil, but not as rapidly as when it started. I obviously also forgot to mention that you need to continuously stir the mixture the entire time that it is boiling! Thank you for pointing this out to me! I will update the instructions.
