Introduction: Dandelion Greens Side Dish
This is one of my favorite vegetarian dishes, it is easy to prepare and it is very healthy.
There are many variations on this recipe and I’ve experimented with many and found that this is the tastiest way to prepare this dandelion dish.
People might think of dandelion as weed that should be discarded, but in fact it is a herb, very tasty and it is good for you. I've read on the internet that dandelion's medicinal purposes include anti-inflammatory, detoxifier, diuretic to mane a few...... I don't know how true these are but I know it tastes good :)
So lets get down to business, the ingredients are next.
Step 1: Ingredients
Here are the ingredients:
A big pack of dandelion greens about 3 pounds
2 medium onions diced
The juice of one lemon
Step 2: Preparation
Clean the greens well with water to remove any sand grains still left
Cut about a quarter of an inch from the bottom to remove the brown tips
Cut the leaves in half, put them in the pot and cover them with water
Put the pot on the stove top and start with high heat until the water starts to boil, reduce heat to medium, cover and continue boiling for an hour or until the dandelion greens turn dark green and they shrink to half their size.
Dandelion is bitter in taste, boiling them for an hour removes the bitterness
While the Dandelion is boiling, put the onions in a pan with a bit of oil and salt, and sauté them on medium low heat until the onions are translucent. This should take about 10 to 15 minutes.
Cooking the onions on medium low heat will prevent them from caramelizing and turning brown
When the onions are done, set them aside for later
When the dandelion is done, let them cool, you can add cold water to cool them faster.
Separate the dandelion in 4, then take the first quarter and squeeze it between your palms to remove the excess water. Don't be afraid to squeeze hard, it is ok to crush the dandelion. It should look like a hamburger patty when you're done.
Now stack the 4 dandelion patties on the cutting board and dice them
Mix the Dandelion, onions and lemon juice add salt to taste then enjoy it
