Introduction: Devilled Chicken and KanKun

About: I'm a mom of 4 and I love to craft! Anything and Everything interests me and i love to create in the process of learning.
This is one recipe my husband loves... the typical Chinese flavor with a mix of hot and sweet comes out so well in this recipe.
I usually do a beef and kankun...but as it's just after Wesak holidays here...we will not have beef till June!
My husband is a beef fan...so he was a bit skeptical of how this will turn out when I said I'm going to try chicken :-)
This was my first try with chicken and I was very pleased with how it turned out!

Step 1: Ingredients


500 g Beef / Chicken  - Marinate with 2 tsp vinegar, 1tsppepper tbs soya sauce ,1/2 tsp salt

10       Green Chilly ( less if you don't like chilli)
3 Tbs   Oil
1 Tbs   Ginger and Garlic paste   ( to make your own grind 50g ginger, 100g garlic and 1 tbs oil (oil is only nessasary if you want to use it for like ages! and want to preserve it)

1 Tbs   Dried red chilli pieces.
1 Tbs   Chilli paste
2 Big onions
1 bundle kankun
1 tsp     Salt

The below quantity is if you need a lot of sauce/gravy which is what I did.
2 Tbs   Sugar
3 Tbs   Oyster sauce
3 Tbs   Soya sauce
2 Cups Stock ( you will get this in the next step)

If you don't want a lot of gravy follow the below quantity...It's not proportionate...but that's how it is :-)
1 Tbs     Sugar
2 Tbs     Oyster sauce
2 Tbs     Soya sauce
1/2 Cup  Stock

Step 2: Chicken

First, once the chicken is marinated boil it with enough water so that you would get 2 cups stock
Once boiled marinate again with-
1 tbs vinigar
1 tbs soya sauce
1/4 tsp salt and pepper.
keep for 15 minutes and deep fry.
this gives the chicken a super flavor!
now for the rest

Step 3: Deep Fry

Cut Onions in to big circles...cut the green chilly into long pieces.
Now as soon as you deep fry the chicken and take it out...quickly put in your chilly and onions and half fry them and take out.

Step 4: Putting It Together

Putting it together is what's left now :-)
heat your oil.. add 1 tbs ginger and garlic, 1tsp salt , 1 tbs dried red chilly, 1 tbs chilly paste, 2 tbs sugar, 3 tbs oyster sauce, 3 tbs soya sauce.
Mix well
Add your kankun and stir a bit and add your stock.
Cook a bit till the kankun sort of cooks and wilts..check picture.
Now add your fried chicken, onion and green chilly. give it a stir and off fire.!

Step 5: My Husbands Thoughts

My husbands thoughts?
'wow...didn't think the chicken would turn out so great! I can't decide which is better!'
yes... it turned out really great!
