Introduction: Easiest Peanut Butter Cookies EVER - Gluten Free! 3 Ingredients Only.

Awwww yeah. hate complication in the kitchen? Love you some peanut butter? If you're celiac like my husband or married to one, like me, you need to have a go-to cookie that's easy to deal with. Three ingredients, one to one to one, some time in the oven and you're all done....

Step 1: Get Your Ingredients Together

1 cup peanut butter (crunchy or creamy)

1 cup white sugar

1 egg

and chocolate chips if you are a chocoholic like me - I recommend http://californiagourmet.net 's.

These measurements make about a dozen cookies depending on how generous you are with a spoon.

I use silicone baking sheets atop regular Wilton baking trays - some people use parchment paper. Whatever floats your boat - just make sure those cookies don't stick.

Step 2: Here Are the Basic Directions.

Preheat the oven to 350.

Mix all the ingredients as cohesively as possible. Don't add anything else (except maybe chocolate chips) because there are some serious chemical reactions going on and you'll end up with either mush or rocks.

Spoon batter onto the cookie tray in nice cookie-ish circles.

Bake for 5-9 minutes depending on your oven but be careful not to overbake them or they are going to have the consistency of hockey pucks.

When they still look soft on top but have a crunchy bottom, they're ready - take them out and they will harden up.
