If I can do it, you can do it, let's get baking!

Step 2: Beat the Eggs

First let's preheat our oven to 350 degrees F. or 176 C. Next let's add 3 egg yokes to a large bowl and mix them until they look pale in color. I am using a hand mixer but you can use a fork or whisk, it is easier though with an electric mixer.

Step 3: Milk and Mix

Next add your sweetened condensed milk and mix until well combined.

Step 4: Zest and Lime Juice

Now we add our lime zest and slowly mix in our lime juice, until it is all mixed together.

***Some recipes call for 8 ounces of cream cheese, but the classic recipe doesn't have it in it, but you could certainly softened cream cheese and add it after you beat the eggs. It will make it more like a key lime cheese cake, but still super yummy!

Step 5: Pour, Smooth, Bake, Chill

Next we pour in our key lime pie filling into a 9 inch pie plate. I actually have a pre-made 10inch one that I bought, it happened to be on sale, so I thought why not. However, the elevation of the pie will be a bit higher in a 9 inch, so I recommend using that, but both will still work fine. Use a spatula to level out the top. Put the pie in the oven and bake for 10 to 15 minutes. The traditional pie was a no bake, but since we have eggs in there, we want to bake it. After it has come out of the oven let's let it cool completely.

Step 6: Toppings and Serve

Now if you would like to add a topping add it after the pie has cooled. In this case I decided to add a sweetened whipped cream topping. Then I garnish it with some thin lime slices. Now it is time to serve up a slice! Enjoy!
