Introduction: Easy Meat Pies
These meat pies are easy to make and are great for freezer-to-microwave or oven when you don't have time to make a meal.
Step 1: Make a Stew
These pies can be made with chicken, turkey, or whatever stew you make. I made this hamburger stew to fill mine. Be sure when you thicken your stew it is VERY thick or it will just run out of the pie shell when you cut it. I normally make as many as I can fit in our oven and freeze the leftover pies. They make great quick meals if my wife and I are late or if our teens need to make themselves something to eat
Step 2: Make the Shells
The pie dough that I make is:Beat 1 egg, add 1tsp vinegar and 1/2cup water and set aside. In a large bowl mix 2 1/2cups flour, 1/8tsp salt together, cut in 1cup margarine until well mixed. Add the egg mixture and cut in or mix by hand until combined and dough is consistent. When I first found this recipe it says to use a food processor. I used to but it is very hard on the machine so now I just mix by hand. The dough needs to be wrapped in plastic and refrigerated for at least an hour to set. Once the dough is set, roll out enough at a time to fill one meat pie plate then repeat..and repeat..and repeat. A double batch of pie dough made 11 meat pies for me
Step 3: Make the Pies
Once you have the pie plates doughed, put about 1 scoop of stew in each, making sure to only fill the shells about 3/4 full then roll out more dough for the tops. Use a fork to press the edges together and trim excess dough. Make a steam hole or the steam will split the dough and make a mess. Place pies on cookie sheets and cook at 350 for about 30 min or until shells start to brown. Take out, cool for a few minutes and dig in

That's cool. Looks like my kitchen. My wife does the chicken and turkey pot pies. I prefer to do beef like Empanada's. That way I can take it with me.

Thanks. Our kitchen is small so it usually looks like that when we do anything . I've never tried empanadas before, thanks for the idea

Great thing about empanada shells is they can be stuffed with desert too not just meats. Stuff some with Apple or Raspberry or Blueberry filling then bake or deep fry. When they come out dust with confectioners sugar.......
