Introduction: Easy-Peasy Coffee Mocha Chip Cookies

This is the easiest recipe there be for excellent Coffee Mocha Chip Cookies, and I will argue that it is the best! I would appreciate your vote in the Caffeine Contest.

Preheat the oven to 375 F (190 C).

Here is what you need.

Ingredients

2 1/4 C Flour

4 Tbsp coffee beans, finely ground

1 tsp Baking Soda

1 tsp Salt

1 C butter (room temp)

1 1/4 C sugar

1 tsp vanilla

2 eggs

Chocolate chips

Notes on ingredients:

* I use BROWN sugar because it is delicious. Make sure to pack it into the measuring cup.

* I also recommend trying this with less sugar, down to 1 C or so.

* Use good coffee beans, and I grind it in a regular little coffee grinder for an extra long time, because you want it real fine. If it's too coarse you will be crunching on the grounds, which isn't terrible, but finer is better.

* Use good chocolate chips. Ghirardelli is good, Toll House is good, and if you can't get one of those, try to get something that's dark chocolate (semisweet or bittersweet).

Step 1: Mix the Wets.

Add the 1 C butter and 1 1/4 C sugar first and mix until they're blended. Then the 1 tsp vanilla and the 2 eggs.

Mix well.

Step 2: Add the Dries

I don't add the dries while mixing. I let the wets sit in the bowl, put the dries on top, then mix. I doubt it makes a big difference, but it's easier this way.

Add the 2 1/4 C flour, 1 tsp baking soda, and 1 tsp salt. Grind the coffee beans real fine and add that right on top. Mix until it's blended. You will get a nice dark cookie dough, and it may be a little dry. If you think it is, you can add just a dab of milk, but really just a dab.

Add the chocolate chips and mix them in.

Step 3: Bake & Eat!

Dollop the dough on a cookie sheet with a spoon and a finger, about 2-3 tbsp per cookie. Bake at 375 F (190 C) for 10 minutes or so, and enjoy!

Make sure to lick the beaters and scrape the bowl, that dough is precious.

How much caffeine is in these? The coffee amount is about what I use for a large pot for two people, so I would guess that you'd get about 1oz coffee equivalent per cookie. Full caffeine extraction, because you're eating the coffee beans themselves, and it's a decent amount. It may not be a go-to morning wake up routine, but it'll make you percolate a little bit.
