Intro: Easy Skillet Lasagna Recipe

Simplify lasagna with this easy one-dish skillet recipe!  Now you can enjoy lasagna in 30 minutes with no fuss.  Combine ground meat (optional) with chopped fresh veggies, uncooked noodles, preprepared sauce, and top with a blend of cheeses for a quick, weeknight meal.  This is one dish you're sure to go back to for seconds!

STEP 1:

You can play pretty fast and loose with this recipe as long as you don't substitute no-boil noodles for the traditional lasagna noodles.  You can use canned whole peeled tomatoes, homemade sauce, or store bought.  You can choose to add protein or not.  I used ground turkey, but beef, pork, seitan, tempeh or a combination of any of the above would work too.  I also threw in some zucchini, mushrooms, and peppers just to up the vegetable quotient, and you can go wild here.

I used:
1 jar pasta sauce
1 pound ground turkey
1 onion, minced
2 red peppers, diced
1 zucchini, diced
3 cloves garlic, minced
A handful of mushrooms, chopped
A good slug of red wine (opt)
10 oz lasagna noodles, broken into 2" pieces

Not pictured:
Olive oil
2 oz fresh mozzarella, chopped
1/4 cup shredded parmesan
3/4 cup Bourisn cheese (can use ricotta!)
Fresh basil, chiffonade



STEP 2: Prep

Clean and chop your vegetables, mozzarella, and basil.  Grate your parmesan.  

Heat 1 tablespoon oil in a skillet over medium heat until shimmering.  Add the ground meat and let sit for one minute.  Flip the meat over the brown the other side.  Try not to stir the meat too much - this will cause it to stick to the pan more, and you won't get the nice deep browning on it.

Remove the meat to a plate and drain.

Add the onion to the remaining hot oil and cook until soft.

STEP 3: Cook

Now comes the easy part!

Add the rest of your veg and garlic to the onions and cook for about 5 minutes.

Add the meat to the cooking veg.

Top the meat and veg with the uncooked, broken pasta pieces, and top with pasta sauce and wine (if using).

Cover your pan.  Increase the heat to medium-high, and cook (stirring often) until pasta is tender - about 20 minutes.



STEP 4: Enjoy

Off heat, add half the amount of cheeses, and stir to combine.  

Place the rest of the cheeses on top and cover until it's nice and melty, about 5 minutes.

Serve and sprinkle with basil.

Made a version of this last night but can't post a photo using the Instructables app :-( I added roasted sweet peppers, grated asiago & parmesan cheese, grated carrot, mushrooms, chili flakes, uncooked macaroni, chicken stock instead of water & a few other things I needed to use up. Threw it all in a covered clay pot & baked for 45 minutes. Was really good, not to mention quite fast! Thanks for the inspiration :-) FYI for anybody making this dish: brown mushrooms (cremini) have far more flavor than white!
I tried this last night and it is a good, easy week-night meal.. The only problem I had was that my skillet was not big enough (oops) and I had to keep adding water to get the noodles to cook all the way. I may try it in the crock pot next time. Overall, it was very tasty and far less work than my classic lasagna recipe. Two thumbs up!

I used to make my family something like this, and it was okay. This definitely looks like a better version and I will be making it. Thank you for the good recipe.
