Introduction: Easy Vanilla Pudding
In this instructable I will show you how to make vanilla pudding. This homemade vanilla pudding recipe is easy to make and made from scratch. While I still like the instant pudding from the store, homemade is so much better. If I can do it you can do it, let's get started!

Step 1: Ingredients/Tools

Ingredients:
- 2 cups of milk (whole, 2%, 1%) (500ml)
- 1/2 cup white granulated sugar (100g)
- 3 Tbsp. of cornstarch (23g)
- 1/4 tsp. of salt (1g)
- 1 Tbsp. of butter (14g)
- 1 tsp. of vanilla extract (5ml)
Tools:
- pot
- spatula or wooden spoon
- metal spoon
- serving containers
- plastic wrap
Step 2: Mix Dry Ingredients
Add the cornstarch and salt to the bowl of sugar. Use a fork or small whisk and blend those three ingredients together.
Step 3: Heat the Milk
Next add the milk to a sauce pot. Place the pot on your burner and set the heat to medium. (350 F 176 C) Stirring occasionally and heat the milk until little bubbles form on the edges.
Step 4: Mix, Stir, Dissolve
Now add the dry ingredients a little at a time, stirring in between, until it dissolves, then adding more, until all the dry ingredients have been incorporated. Continue stirring and cooking, until the pudding thickens and sticks/coats the back of a metal spoon. Now remove the pudding from the burner.
Step 5: Flavor Time
Now let's add some flavor. Drop the butter and vanilla extract into the bowl and stir, until it is blended in.
Step 6: Fill, Cover, and Chill
Now fill up your serving containers and then cover the bowl and pudding with plastic wrap. This will keep the pudding from forming a skin on the top of it. Chill the pudding for at least 30 minutes before serving. Or you can certainly serve the pudding warm. :)
Step 7: Serve It Up!
Now time to eat that yummy pudding. :) Enjoy!

Dear Matt,
I am surprised to see that you left out the best part of the pudding recipe. For a richer flavor, after cooking the pudding until thickened, remove from the heat and add a small amount of the pudding to two egg yolks and then slowly add the mix back into to the pudding - tempering gradually so they won’t scramble, and cook the pudding again until it just begins to bubble. Take off the heat and stir in the butter and vanilla.
I hope you don’t mind that I added this tip. It does make a difference in the flavor.
This recipe is enough to fill an 8” pie.

I agree completely, you can’t make a pudding without breaking an egg or two. When my daughter was a baby in the early 80’s I had to feed her canned formula. It was pretty terrible tasting so eventually she refused to eat it. My mom taught me how to make pudding from scratch in a microwave using the formula. She loved that pudding and grew up very healthy. Just one trick I learned as a single dad. I switched over to milk based pudding after she was allowed the real thing.

No problem! Yes there are several different recipes that call for eggs. :) I thought I would do one that didn't call for eggs, since I regularly get requests and comments for eggless foods.

We both really like it. I had some fresh strawberries and I was trying to figure out what to do with them. I made this and added those to the pudding. Very good.
