Introduction: Edible Terrariums
Don't you get exhausted convincing your children to eat healthy snacks instead of candy and sugar ??
Or you're trying to stave off those 3 pm hunger pangs and your mind automatically goes to sugar as an option?
Why not make your own edible terrariums as snack boxes for your li'l ones (and yourself) by including some healthy options and designing it like a mini garden? :)
Step 1: What You Need:
- Small glass, seal-able jars (mason jars work too)
- A variety of healthy snacks - Nuts like pecans or walnuts, trail mix, broccoli, celery, avocados, fruits, other fruity snacks etc
- Peanut butter (to hold things in place and a decent source of protein)
- Nutella (coz it's yummy; lol)
- Graham crackers
Step 2: What You Do:
- Start with a thin layer of nuts. I chopped some walnuts and pecans and used it as a base.
- A layer of trail mix (almonds, peanuts, chocolate chips and raisins) on top covered by another thin layer of ground up pecans finished the base rock layer.
- Break up some graham crackers into a fine powder using a wood / steel ladle.
- I made some guacamole to add some bushes, shrubs in the terrarium. The recipe I used includes 2 avocados - mashed, stirred with finely chopped onion, garlic, tomato with 6-8 drops of lime juice, salt and pepper. I also added some pink himalayan salt and a little turmeric and mixed everything really well. Scoop out a little bit of the guacamole and add it to your rock layer.
- Place some steamed broccoli on the guac layer for trees. (You can use raw or steamed broccoli; just make sure you add it to the jar right before eating).
- Add a few bigger nuts in between the broccoli to look like rocks.
I made one more jar with the Nutella to stave off sweet cravings.
I added a base layer of trail mix, to resemble rocks. I added Nutella on top of it and added some broccoli, pretzel sticks and some flower shapes that I made form fruit roll-ups.
To make roll ups: I made the fruit roll ups using 2 boxes of fresh strawberries and raspberries, finely washed and randomly chopped. I do not like my fruit to be too sweet so I didn't add extra sugar.
- Puree the fruit until you have a uniform, smooth mixture (like in the image). If the mix is too thick and cannot be poured, add a little bit of water to thin it out.
- Pour mixture on to a pan lined with plastic wrap. Even out the thickness using a flat spatula.
- Leave the tray in the oven and set it to the lowest temp setting. Let the fruit completely dry (this takes a while, about 8-10 hrs).
- Test the fruit by gently touching the center. The fruit shouldn't stick to your finger, or form an indent in the pan.
- Once done, remove the tray and cool for a few mins.
- Cut small strips of the fruit with a knife and then peel off the plastic. It's easier than peeling the plastic from the entire sheet of fruit.
The overall terrarium's look is so colorful and cute. Plus there's chocolate, nuts, fruits and veggies.
You can also use celery with peanut butter, avocados, eggs, sliced strawberry / banana in different shapes or use chocolate rocks if you want something extra sweet etc. Just play around with your food options and have fun with it.
