Introduction: Eggs Vibostak
Per serving:
Ingredients:
4 pats - Sweet butter
2 large eggs
1/3 medium onion, minced
1 slice swiss cheese
1 slice (sandwich style) ham
1 piece of toasted bread (white, rye, or pumpernickel)
Salt, black or white pepper, cinnamon to taste.
Directions:
Toast bread, place on plate. Lightly butter.
Melt two pats of sweet butter in a frying pan.
Sautee onions until translucent. Add Ham to frypan.
Sautee ham, lightly brown on each side.
Place ham and onions on toast.
Melt two pats of sweet butter in a frying pan.
Add eggs for "Sunny Side up" style, season lightly with salt, pepper and cinnamon.
Cook until white of egg is not translucent. Do not over cook.
Place eggs over ham, top with slice of Swiss cheese, so heat of the eggs melts the cheese.

Sorry, I do not, at this time, have a photo of the actual completed (as listed) recipe made in my kitchen. I used an old photo of a variation I had made, which is really close (Swiss melted over eggs on top of Canadian Bacon on toast).
We have actually made several variations of this (the recipe originated back in college, Summer of '72) ... over the years we have used English Muffins, Pita, even plain white bread ... we've tried Colby, Monterey Jack, American or sandwich sliced Cheddar ... used Canadian Bacon, Tayor brand pork roll, bacon, sausage patties ... multiple variations n a theme. They're all good.
