Introduction: Fluffy Scones
These delicious, tasty breakfast scones are a great breakfast pleaser. With only 4 ingredients they are ridiculously easy. As well as that they are egg free and dairy free, making them suitable for vegans!
Ingredients:
3 1/2 cups flour
1 tin coconut milk (reduced or full fat)
1 teaspoon baking powder
3 tablespoons of sugar
Step 1:
Sieve the flour, sugar and baking powder into a mixing bowl and mix well
Step 2:
Pour the coconut milk into a bowl and mix until the solid coconut and liquid are combined
Step 3:
Preheat the oven to 160 degrees Celsius and brush coconut oil or coconut milk onto the scones
Step 4:
Pour the coconut milk into the dry mixture and mix together until a soft dough is formed
Step 5:
Shape the dough into a rectangular shape of about 2cm in height and use a mould to create scone shapes
Step 6:
Sprinkled desired toppings on the scones, if any, and place the scones into a baking sheet or an oiled sheet of tinfoil
(Energy boosting chia seeds and dessicated coconut are great toppings)
Step 7:
Cook the scones for 30 minutes or until an inserted tooothpick comes out clean. Serve with jam or melted berries in the microwave.

What are the other toppings you used? I see at least 2 more besides the chia seeds and coconut.
