Introduction: Garlic Foam
A tasty, if strong, garlic flavored foam. Good as a dip or on top of an entree dish.
Step 0: Gather Ingredients and Tools
Ingredients
2/3 cup milk
2/3 cup water
3 garlic cloves
2g soy lecithin
Tools
Immersion Blender
Shallow Bowl/Dish
Serving Dish (somewhere to put the foam after you make it)
Step 1: Step 1: Combine Ingredients
Pour water, milk, soy lecithin, and garlic into a shallow bowl.
Step 2: Step 2: Blend!
2. Blend with immersion blender until there is a layer of foam above the liquid.
Step 3: Step 3: Scoop Off Foam
3. Scoop off the foam with a spoon and set aside until served.
Step 4: Step 4: More Blending!
4. Repeat steps 2 and 3 until there is no more liquid in the bowl.
Step 5: Step 5: Eat and Experiment!
Serve with crackers or slices of French bread
Try using roasted garlic for a more mild garlic flavor, or adding herbs

Is there a non-dairy alternative? Would Soy, Almond, or Rice "beverage" work in place of the Mammary secretion "Milk")?

Nice flavor idea!
Does the lecithin give body to the milk foam?
Would whipping cream change the effect too much?
