Introduction: Ginger Peach Popsicles

This popsicle is healthy and a hit with the kids. The sweet taste of the peaches is perfectly complemented by the spiciness of the ginger. If you have a cold or flu, make sure to whip up a batch of these popsicles because they are a delicious way to eat more ginger. According to Dr. Oz, "If you’re battling nausea, you might also be battling a cold or flu – both of which may also be helped with some ginger. Ginger is a natural anti-viral, so it will help fight off pesky illnesses and has been shown to heat up the human body to help induce fever. Fever is the body’s natural defense against cold and flu, and with a little help from this powerful herb, you can attack the root of your flu and find faster relief from your symptoms."

Let's get started!

Step 1: Ingredients and Tools

Ingredients

  • 2 ripe peaches
  • ginger to taste (I use lots because I like the taste but if you can't handle it you can use just a little bit.)
  • sweetener to taste

Tools

  • blender
  • popsicle molds (Got mine from IKEA)
  • hands
  • a sharp knife
  • strainer

Step 2: Wash and Cut Ingredients

1. Wash the peaches and ginger.

2. Cut the flesh of your peaches into chunks for easy blending and throw away the pits.

3. Using your knife, peel off the dark brown skin of the ginger. Then cut the ginger into small chunks.

Step 3: Blend (and a Taste Test)

1. Place the ginger and peaches in a blender with a small amount of water. Blend until smooth.

2. Taste the puree. If it isn't sweet enough, add some sweetener. If it needs more ginger, add some more. I added some sweetener to my puree because it wasn't sweet enough.

3. Blend one last time until the mix is smooth.

Step 4: Getting Rid of Fibers

1. Place your strainer over a bowl and pour the puree through it to get rid of the fibers from the ginger. This step is optional if you like the fibers/are on a time crunch/are too lazy.

2. Using your spoon, rub the pulp to try and get as much juice as you can through the strainer. The fiber-free juice should look a bit like applesauce.

Step 5: Assembly!

Assembly

1. Pour the peach and ginger puree into your popsicle molds. Use a funnel to get the juice into the molds and to avoid spills.

2. Pop the top of your popsicle molds on, and put the molds into the freezer.

3. Leave the pops into the freezer for 10 hours, or until they are rock hard. I left mine in overnight.

Step 6: Freeze and Enjoy!

Enjoy!

1. After letting the popsicles freeze for 10 hours, or until they are rock hard, run the molds under some warm water for a few seconds to let the pop easily slide out of the mold. Pull the pops out and eat!

2. You can keep the popsicles on a sheet of wax paper in the freezer for 2 weeks, although I don't think they'll last that long ;).
