Introduction: Gluten Free Cream Cheese Pancakes
About a year ago, our family ended up going gluten free. While there are a lot of substitutes for flour, many of them read like a chemical factory rather than whole food. Low carb recipes often give us acceptable substitutions, but we've found that the best bet is to explore cuisines that don't normally use flour unless my daughter really misses a food such as pizza or pancakes. While these cream cheese pancakes would not work as pancakes for people who are not gluten free, our friends tend to enjoy them as long as we call them "mini crepes". They are also simple enough for my daughter to make herself.
Step 1: Step 1
Gather your ingredients together.
You will need
4 eggs
4 oz cream cheese
1 apple
1 dash salt
Pretty easy, right?
Step 2: Step 2
The next step is even easier, throw everything into the blender. We do cut the core out of the apple, but that is just us.
Step 3:
After letting the batter sit for a couple of minutes for the bubbles to subside, they can be cooked like regular pancakes. I use a heavily buttered pan, but I can't say it's necessary, I just like the taste. I hope you enjoy them as much as my daughter.

I've been playing around with coconut flour lately, a little bit goes a long way to making these fluffier.
