Introduction: Grow Mung Bean Sprouts and Make Egg Foo Young With Them

Growing sprouts is fun, yummy, and so much better than buying them at the store!

Step 1: Step One to Growing Sprouts

Sift through and rinse the beans before using them! Place a damp paper towel in the bottom of a dish and play the beans in a SINGLE layer. Sprouts like damp dark places, so place something over the bowl (I used chop sticks and criss-crossed them) and a towel over the bowl to keep the sprouts in the dark- or place them in a cabinet.

Step 2: Daily Check

Check the sprouts daily to make sure they are damp and watch them grow!

Step 3: Sprouts Are Done!

When the sprouts are at the desired length-usually four days or so rinse them and they are ready to use!

Step 4: My Egg Foo Young Recipe

Ingredients:
6 Eggs
 2 Cups Mung Bean Sprouts
3 small carrots, shredded
1 Cup edamame
1 can mushrooms, drained
1 Tablespoon minced garlic
1/4 teaspoon dry ginger
4 Tablespoons soy sauce and a little extra for eating if desired
vegetable oil for cooking

First, cook the sprouts in boiling water for 1 1/2-2 minutes, so they are tender but firm. Drain this well.
Scramble the eggs in a bowl. Put all other ingredients into a seperate bowl and mix.
Heat oil in a wok or large frying pan and saute the vegetables. Pour eggs over the vegetables and stir like scrambled eggs. Cook until the egg is cooked and everything is heated through.
Serve immedietly with jasmine rice.

Note: You can cook this in individual patty form like in the restraunts or you can cook it in one big pan 'family style.'

Yield: About four servings
