Introduction: Hashtag This: Potato Hash Medley
Digging around in the 'fridge again, and this time all the ingredients for a good Potato Hash Medley presented themselves! "Hash", in the traditional culinary sense, is a course mixture of ingredients, usually fried. Common versions include corned beef hash, roast beef hash, and various potato hashes. We put our own spin on this tried and true dish that can accompany breakfast, lunch or dinner, and came up with our Potato Hash Medley that incorporates, in addition to little diced potatoes and onions (the usual base for potato hash), ham, bacon (double dipping there, but yum!) and corn. Paired up with a Summer Cucumber Salad and some balsamic chicken, and you've got a nice, simple and tasty meal!
Step 1: Ingredients
Hash, by virtue of being hash, can consist of just about anything you like, mixed together and fried. In the case of our Hash Medley, we used:
2 cups diced potatoes
1 cup diced ham
1/2 cup diced onions
1/2 cup corn
1/4 cup chopped pre-cooked bacon
2 tablespoons olive oil
season to taste
Optional ingredients: shredded cheese
Step 2: Create Potato Hash Base
Over medium-low heat, sautee onions in olive oil until tender and translucent, then add potatoes
Step 3: Add Potatoes, Ham and Bacon
When the potatoes are fairly brown, add your diced ham and bacon, and continuing stirring until ham is browned. We like to keep things going over medium-low heat until it literally starts popping.
Step 4: Add Corn
Add your corn and cook for another 10-15 minutes. Season to taste with salt and pepper, or a little flavored Mrs. Dash.
Step 5: Eat Hearty!
There you have it! The whole thing takes about 20-30 minutes start to finish. Enjoy alone, paired with chicken, or have it for breakfast with eggs! Enjoy your #Hash!
