Introduction: Healthy Banana Brownies - Christmas Dessert
Best Chocolate Banana Brownies – NO refined SUGAR, NO BUTTER, NO FLOUR! A Recipe you have to try – it really tastes amazing!
Step 1: INGREDIENTS (for 12 Brownies):
- 1 banana
- 10 dates
- 2 eggs
- 1 tbsp coconut oil
- 1 tsp baking powder
- 15g cocoa
- 30g blended oats
- 40g chocolate (70%)
- 30g raspberries
+ snow – coconut flour :o)
Step 2: BROWNIES MIX
- In a large bowl beat 2 eggs.
- Blend 1 banana and 10 dates (remove pit) until very smooth creamy texture. This will make brownies sweet
- Place the blended mix into the bowl with eggs. Add coconut oil, baking powder, cocoa and blended oats. Whisk it all together.
Step 3: BAKE
- Preheat oven to 180°C
- Place the baking paper inside a pan and pour the mixture inside it. Bake for 20min.
- While baking, place 70% chocolate in a heatproof bowl over a saucepan of heating water (be careful for the bowl not to touch the water). Stir with a spoon until melted. Leave it to cool.
Step 4: SERVE
Serve brownies with raspberries, melted chocolate and make it snow with coconut flour! ^^

I have made these a two dozen times, 2nd best recipe I have ever found on the internet. But, I made some changes. First, I double the recipe, so they are thicker and well, more is better. I add 4 fat tablespoons coconut oil, instead of 2. I use 40 grams blended oats and 20grams coconut flour or hazelnut flour. I add 1 teaspoon chia seeds. Instead of melting chocolate and drizzling, I toss in some chocolate chips. I add 1 tsp vanilla and 1/8th teaspoon cloves, for some spice and healthy molecules. Don't add more than 1/8th! 355 degrees for 25-27 minutes.

replace the eggs with flax seed (google flax seed egg replacement) and you have a truly healthy (& 100% plant based) recipe!
Also, why not skip the chocolate (which is full of dairy & fat) with more cocoa powder and add another banana for sweetness?

actually, cooking chocolate usually doesn't have dairy. That is unsweetened block chocolate. Also there is quite a few dark chocolates that you can get in food co-ops, Whole Foods, Trader Joe's, Sprouts and other local health food stores.

Liking the flax seed replacing eggs idea. This seems very close to a CLIF BAR recipe. I'm always trying new / homemade ideas for the backpacking instead of "instant food".
