Introduction: Gluten Free and Sugar Free Banana Coconut Cookies

I have been looking for a gluten free and sugar free cookie recipe for a LONG time. Every single recipe I found contained something that was bad. Until I found this one. This recipe meets my needs and is incredibly delicious. It is gluten free, sugar free, dairy free, and egg free. The coconut gives the cookie a nice texture, and the bananas bind it and make it as sweet as a normal dessert. In this instructable, I will be teaching you how to make my gluten free banana coconut cookies, a great recipe for a gluten/sugar free snack.

Step 1: You Will Need...

Ingredients:

  • 1 cup unsweetened coconut flakes
  • 1/3 cup + 2 tablespoons oats
  • 2 ripe bananas
  • 1/2 tablespoon unsweetened cocoa powder

Supplies:

  • Blender
  • Bowl
  • Cookie sheet
  • Parchment paper

Step 2: Mash the Bananas

Using a metal fork, (or a masher if you have one) mash the bananas in medium bowl until they are a puree.

Step 3: Make the Flour

Put the coconut and oats in a blender and blend until they turn into crumbs.

Step 4: Make the Batter

Add the flour mixture into the bowl with the bananas and combine. Add the cocoa powder and stir.

Step 5: Bake the Cookies

Scoop about two tablespoons of batter onto a cookie sheet lined with parchment paper. Make sure that you press the down so that they will be flat. Don't be afraid to put them too close together, because they do not spread. Bake for about 25 minutes. Transfer to a cooling rack and enjoy!
