Supplies
Ingredients:
- 7 oz of sweetened coconut flakes (198g)
- 3 to 4 Tbsp of sweetened condensed milk (or use something like agave nectar, maple syrup, simple syrup) (39 to 52g)
- 2 1/2 cups of chocolate - any chocolate chips, chocolate bars, etc. (approx 400g)
- Roasted almonds
Tools:
- Bowl
- Fork
- Sheet pan
- Silicone baking mat, parchment paper, or wax paper
- Food Processor
Step 1: Grind the Coconut
Add the sweetened coconut flakes to a food processor and grind them up for about 30 seconds or so we just want the flakes to be smaller.
Step 2: Add the Binder
Either keep the flakes in the food processor or add them to a separate bowl. Time to add the binder. In this case, I am using sweetened condensed milk. But you don't have to use that; you can use something like agave nectar, maple syrup, corn syrup, or a simple syrup.
Only add just enough so that you can grab a small amount and press it together, and it will hold its shape. Don't over to the binder. If you accidentally add too much, just add more coconut flakes.
Step 3: Form the Almond Joys
Now, take a couple of tablespoons of coconut flakes and mold them using your hands into little bars. Press them together and then shape them with your fingers. If you have little silicone bar molds, you can use those too.
Place them on a cookie sheet or baking tray, or something like a platter, lined with parchment paper or a silicone baking mat.
Step 4: Almonds on Top
Melt a little chocolate and put it in a sandwich bag, and snip the corner off, or you can use an actual piping bag. Add dots of chocolate where you want your almonds to be. Usually two per bar.
Then place an almond on each dollop of chocolate.
Place the whole thing in the freezer and freeze for 30 to 45 minutes. This will ensure the bars stay together while dipping.
Step 5: Melt the Chocolate
Now melt your chocolate. You can use your favorite chocolate chips, chocolate bars, etc. Melt them in a microwave-safe bowl in the microwave using bursts of 30 seconds and stirring until melted, or use the double boiler method on the stovetop burner.
Step 6: Dip
Now dip those bars in the chocolate. Use a fork underneath to hold it and allow excess chocolate to drain off. Then put it back on the tray.
Once all of the bars are dipped, place the tray in the fridge for 20 to 30 minutes so the chocolate can set.
NOTE: If you are melting actual chocolate and not using something like chocolate melting wafers, candy melts, or almond bark, then you may or may not want to temper the chocolate as well. If you are fine storing the candy bars in the fridge, then don't worry about tempering the chocolate. But if you want to give them as gifts or have them sit out at room temperature, you should probably temper the chocolate. You can follow this tempering chocolate guide if you want.
Step 7: Serve
Now it is time to eat those homemade almond joys!
Enjoy!
