Introduction: Honey Yogurt Cookies

I had some Greek yogurt sitting in my fridge and I didn't want to eat it by itself, so I figured I'd look up some recipes that needed yogurt. In the end I didn't like any that I found, so I played around a bit and formed this recipe. They taste great and are on the healthy side. So, if you have someone who doesn't like refined sugar like I do, they're perfect!

Step 1: Ingredients

1.  1/3 cup honey ( I prefer using local honey)

2.  3 tablespoons applesauce ( you may use oil here if you prefer; I tend to always substitute applesauce for oil in my recipes)

3. 1/3 cup yogurt ( you can use any kind or flavor; I like using Greek yogurt; this batch was made with black cherry)

4. 2 eggs

5. 1 1/2 cups flour

6. 1 teaspoon baking soda

7. 2 teaspoons vanilla

8. 1 small package of chocolate chips (you can add whatever you want into the cookie base; I love chocolate and can't help but use it whenever I can)

Step 2: Let's Get Cooking!

Let's start with the wet ingredients. Blend the honey and applesauce together. They don't have to be perfectly blended together. 

Next add the vanilla, eggs, and half the yogurt. The mixture will look slightly chunky at this point because the yogurt won't blend too well. Don't worry though! 

Step 3: Dry Time

Add a little flour and the baking soda. Throw in the rest of the yogurt and flour.  Adding the yogurt in two portions helps make stirring in the flour easier, so no blender is needed. 

Now it's baking time!

The cookie sheet I use doesn't need any kind of baking spray to keep the cookies from sticking. You may want to use some spray, though, if you have older cookie sheets.  Bake at 400 degrees for 8 to 10 minutes. The only real test to see if they're done is to look at the bottoms of the cookies. The tops may not brown nicely like other cookie recipes as you can tell from the picture of the finished product. 

Let them cool before eating them. They have a cakey consistency to them; hence why my boyfriend calls them "Cakies."
