first preheat oven to 350°f
clean the meat by rinsing off with water
pat the meat dry with paper towels
remove excess hardened fat from the outside
heat a frying pan without oil till drops of water "dances" around(if using a non-stick pan be careful if it gets to hot the non-stick coating will start to burn and release noxious fumes which possibly kill you so use an aluminum clad pan or cast iron pan).
