Introduction: How to Make a Simple Carrot and Raisin Salad

About: The name comes from the First Star Trek movie, that pretty much says it all.

It's simple to make with only three ingredients. It keeps in the fridge and retains its looks and flavor. It's a great  healthy snack that combines both fruits and vegetables and since its naturally sweet its fun to eat. You can even put some in a cup for lunches or just have it as a side dish with your main meal.
There are no exact measurements for the ingredients. Make it the way you like it. If you like raisins and want it sweet then put in extra, it's that simple.

Start with carrots:     For this batch I used about 3/4 of a 2 lb bag. Since it's summer and garden growing time if you have your own garden carrots that is even better. Peel them and wash them. Then using a shredder or if you want, a food processor, shred them into a pile of carrots bits. Watch out for you fingers when you get close to the ends, you don't want to add finger parts to the mix. I use a hand shredder for small batches because I don't like having to clean up the processing machine for just a few carrots. It's up to you, either way the carrots  turn out the same.
Next put in a couple of handfuls of raisins. Again, how many is totally up to your taste, and you can always add more if you think its a little light.
Finally put in a few spoons of Miracle Whip. I have seen recipes that use mayonnaise but then they have to add other stuff for flavor like pineapple juice  For some reason Miracle Whip just gives this the ideal flavor without having to add anything else.  So, spoon it in and mix it up. Add enough to coat everything. If you have some shredded carrots that are not coated, add another spoonful.
You can stop mixing and start dishing right away if you like but I have found that its better to let it cool down in the fridge for a few hours. This gives the flavors a chance to blend a little and also the raisins will start to plump up from the juice of the carrots.
If you make a lot and keep it in the fridge the raisins will plump up a lot and then some of their darker juice will make dark raisin juice marks in the carrots. It does not effect the taste at all. Just remix it and enjoy it. Like I said its a great snack especially if you have finicky kids.
Maybe we should just call it CRS.  Or CRSS (Carrot and Raisin Salad Snack)
