Step 1: Cutting the Filet

Take the filet and begin dicing it into small squares. The small squares creates for more surface area which helps the lime juice cook the fish.

Step 2: Add Lime Juice

Cut 5-6 limes in half depending on amount of fish. Fish should be saturated in lime juice (remember you can always poor out the lime juice).

Step 3: Cooking in Lime Juice

The fish will begin to cook immediately, however, because citrus is acidic it is not being being cooked by heat but the citrus juice from the lime. This process will take anywhere from 15-20 minutes. You can leave in the lime juice longer as it will cook the fish more thoroughly. Overcooking isn't an issue. It's all about preference. :)

Step 4: Add Your Fruits and Vegetables

This is where you can be particularly creative. Carlito's puts in Carrots, Tomatoes, Cucumbers, Onions, and some Cilantro and Jalapenos for a little kick! Mix it all up with the fish and lime juice.

Step 5: Enjoy!

Grab some chips, toastadas, or a spoon and enjoy! Take it to a picnic, dinner, or just enjoy it at home!

I didn't know that the cooking process was so short for Ceviche. I thought it was a lot longer than that.

The duration of cooking is really up to your preference. If you prefer a little more sushi-grade fish the time will be much shorter compared to those who prefer the fish cooked entirely. So cooking time is really up to the tastebuds of the creator!
