Introduction: How to BBQ Chicken: Missourri Style

Thanks for taking the time to look at my instructable.

In this instructable I will show you how I cook my BBQ chicken breast on the outdoor grill. You can cook any part of the chicken this way legs, thighs wings, etc

I grew up in Missouri, born and raised, and this is how I was taught to BBQ. I have found a lot of other cities in this country call this St. Louis style BBQ, to me it's Missouri style.

I hope that you will find something you can use from this technique and/or provide some other suggestions.

Step 1: Safety

First step is to realize the hazards involving BBQ'n Chicken

Hand washing: After speaking with some culinary teachers I recently had a class with they recommended using soap and warm water (duhh), but the went on to recommend to wash you hands and sing happy Birthday to yourself. The reason behind this idea is because the time it takes to sing the song is about how long you should be cleaning your hands (30 seconds).

Next safety item

Chicken cooties (much worse than girl cooties). After touching raw chicken make sure you wash your hands. If you have never had salmonella let me tell you from first hand knowledge you don't want to. So wash your hands with soap, your work area with bleach water, as well as your tools; knives, forks, plates etc that come in contact to your raw chicken.

Sharp tools: If you cut yourself I will laugh at you, be careful of what you do with knives and such.

Hot stuff:
1. This would be the flaming fuel that you use to cook your chicken, also be careful of hot surfaces.
2. Boiling water will burn you so be careful with it.


Other stuff people often forget:
Don't have your grill to close to the house, you may burn the house down. I have seen this done.
Keep hydrated.
Is your work area cluttered? keep it clean.
Keep the kids away, they sometimes want to cook their hands and then cry about it.
Use protection, and I mean oven mitts not the other protection.
Finally let your grill cook all of the old crusty stuff you left on there from you last grilling session. Use a scraper and wire brush to remove the carbon leftovers.




Step 2: Supplies

Here is what I used.

1. Boneless Chicken Breast
2. Maulls BBQ sauce "Don't baste your BBQ Maulls it, MAULLS It!" (their slogan) known well in the St. Louis, MO area.
3. Spatula
4. Tongs
5. Pot and lid
6. Grill
7. Stove
8. Water

Step 3: Prepare the Chicken

In this step I will show you how I prepared the chicken.

My chicken was frozen so I wanted to thaw it as evenly as I could. Microwaves just turn chick to rubber even when defrosting it. I just went with a good old pot and lid. Follow the steps below:

Get you pot, the cooking one not the stuff you smoke.

Put your chicken in the pot and add water. You can also add some sauce to the water, it helps with light flavor and color.

Place on stove.

Turn on 3/4 heat

Let it start heating up and defrosting the chicken.

It might boil a light boil this is OK but try to stay away from a roaring boil. It will cook some and start turning white, this is this is a good thing.

While it is defrosting, start your side dishes if you have any. Corn on the cob, cornbread, ice tea etc.

Light your grill and let it burn off the old cooties from previous grilling sessions.

If you have never boiled chicken before you will find it turns very white when cooked in this manner. (Hint *** it doesn't dry out when boiled)

When you grill is ready, turn it on low heat and add your chicken.

Step 4: Moving to the Grill

Here we are at the grill.

Looking at the photo below you will see the chicken is really white. it is a partial camera exposure error and it is really bright white chicken. Sorry I thought I had a better photo at the time I took this.

Now that you have placed the chicken on the grill throw some sauce on it. Since our chicken is at least partially cook it won't hurt to add sauce at this point. See the photo below.

I do this so the sauce thickens up and stays on the chicken. I like my sauce added during the cooking session so it gets a little charred and thick Missouri style.

After the chicken cooks a little while on one side flip it to the other side and add sauce again. See the photo below.

Head on over to the next step now for some more instructions on how to cook great BBQ chicken.

Step 5: Finishing Up With Sauce

Since you have flipped the chicken it should be cooking up just fine, the sauce should be thickening up and you should be getting ready to flip the chicken one last time.

Add a little more sauce and flip you chicken a final time.

Time to add the final sauce,

I add my sauce thick, cause that is how I like it. I also want it cooked and do thicken up from the heat.

So add your sauce now.

Let it cook for another minute or two, this will let the fresh sauce thicken.

Then pull it off the grill.

Turn the gas off on the grill controls and shut the gas tank valve to the closed position.

Now go to the final step.

Step 6: Add the Final Touch

It is time to enjoy what you have made so..

Add the final touches

You can have BBQ chicken without:

1. Sweet corn on the cob

2. Cornbread muffins and butter

3. Sun brewed ice tea

4. Hungry kids (photos below)
